Cauliflower Fried Rice

Looking for a simple recipe to keep those cravings away?  Here is a staple meal in my diet, that I absolutely love!  It is one of those meals that I can eat for dinner, and then have left overs the next day for lunch...and I ain't madddd! 


What you need

1 bag riced cauliflower (I get the organic frozen from Whole Food, Trader Joe's has it too)

1/2 - 1 bag of frozen mixed veggies (I use peas and carrots)

2 Whole eggs

Protein of your choice

Coconut Aminos

Salt, Pepper, Chile Powder


 

'TIS COOKING TIME

  • Set the cauliflower rice out and veggies, and if it is frozen it doesn't matter but make sure it is not crazy frozen
  • Oil up your pan, and cook up your protein to your liking (I used chicken last night, and I made it in a cast iron with avocado oil, and added chili powder + turmeric)
  •  Using the same pan, take out your protein, add in your cauliflower rice and some of the coconut aminos (I eyeball this, go based off of your taste buds)
  • Then add up the other veggies of your choice, once all is cooked down a little move it to the side of the pan and fry up the eggs
  • You'll mix all of this together, add some more coconut aminos, I also add salt, pepper, and more chili powder for an extra kick

To top it off some Sky Valley Siracha :)
