Veal Meatballs and Lentil Pasta

A healthier version of spaghetti and meatballs

Makes: Approx 3 Servings

  • 1 cup lentil pasta
  • 1 pound ground veal
  • gluten free flour as needed
  • fresh chopped garlic (to your liking)
  • Spices and Seasonings you like
  • 1 large egg
  • 1 cup chopped mushrooms
  • 2 cups cherry tomatoes
  • 5 cups spinach
  • 1/2 a jar of Pasta sauce

  1. Dice up garlic, throw it into a mixing bowl with the ground veal. You will mix it up with the egg and the spices you enjoy (I used ground pepper, chunky pink salt, red pepper flakes, and Flavor God no salt seasoning.) Once mixed completely, add gluten free flour to help you make meatball form.
  2. Heat up a pan (I used a cast iron) with olive oil, throw in your cherry tomatoes. During this time I started making my pasta. Once the tomatoes were a little roasted I put in my meatballs, turning them every few minutes till all the edges were golden brown.
  3. Lastly, I took tmy meatballs out, added my mushrooms and tossed them with the tomatoes. Then added my pasta sauce to the lentil pasta and mixed in my spinach.
